Watermelon Juice with Basil Seed | Summer Drink Recipe!
Summer Watermelon Season means tons of ripe watermelon. I always like to buy the larger watermelons vs. the smaller personal sized watermelons because the larger ones are typically sweeter. This means there's plenty of watermelon to go around + leftovers for juicing and blending in drinks.
A great summer drink inspired by some juices I had in Taiwan is watermelon juice. In Mandarin it's called 西瓜汁 (Xīguā zhī). I find it strange that watermelon juice isn't a more popular drink in the US, like say grapefruit juice. It's refreshing, low in calories and has lots of vitamin C and other antioxidants.
I also recommending adding reconstituted basil seeds to the drink. Basil seeds are a very popular drink add-in in Asia and I think they add a fun texture to this drink. (Note: While similar in size to chia seeds, basil seeds are different.)
Ingredients:
2 1/4 cup of seedless watermelon, cubed & chilled
1/2 cup ice cubes
3/4 cups of water
1-2 tsp. basil seeds*
Ready in Total Time: 5 min.
Prep Time = 5 min. Cook Time = (none!)
*Where to buy Basil Seeds? Try looking for them at your local Asian grocery store (Indian or Thai speciality stores). If not, you can always buy them online which is were I ended up buying mine.
