Taiwanese Street Food cravings?If you've ever visited Taiwan, it's so easy to walk the streets in search of a satisfying meal or snack. You may have seen a popular Taiwanese chain called HOT-STAR's XXL Fried Chicken! Also known as Ji Pai (台灣大雞排) or big Taiwanese Fried Chicken, these pieces of chicken breast are extra large, as they are butterflied before marinating and deep frying! They are tender and flavorful, yet still juicy, making this Taiwanese Fried Chicken a must try when visiting Taipei or a local night market. Here's my copycat recipe of HOT-STAR's Ji Pai that you can make at home!
Tip: If you have extra chicken you'd like to cook, prepare these pieces as usual and let them cool completly before placing in them the refridgerator. The next day, reheat these in an airfryer or even a toaster for best taste and texture!

Start by preparing the marinade in shallow dish or bowl.
Butterly the chicken breast into a thin large piece and use the back of a knife to gentenly flatten the meat.
Marinate the chicken for 15-20 minutes (there's no need to do this for longer as we're working with a thin piece of chicken that will marinate quickly).
Add an egg to the marinade/ chicken and coat well. Transfer the chicken to a dish with the cornstarch and sweet potato flour mixture and coat completely before deep frying.
Immediately deep fry after coating with flour to keep the chicken crisp. Deep fry for about 5 minutes or until golden brown and done.
Transfer the cooked chicken to a wire rack for cooling, then immediately sprinkle with the seasoning spices (to taste).
