Taiwanese Beef Noodle soup is a popular Taiwanese soup . . . so popular, it's the National Dish of Taiwan.  (Yes, there really is a national dish!)

This Beef Noodle Soup recipe is from my Uncle.  Great for warming you up on a cold day.  I've modified it so we could use the slow cooker and get perfectly tender meat without cooking for hours on the stove.  

If you don't have a slow cooker, you can still cook this soup by slowly simmering for about 1 - 2 hours on a very low heat (or until the meat is tender).  

If you're curious, I'm using this 4-quart digital slow cooker.  It's not too big to take up kitchen space, but still big enough for a recipe like this. 


Tip:  If you like a stronger flavor and of course more meat, feel free to add more beef into the recipe (which will make the flavors of the soup more intense).


Ingredients:

  • 1 - 1.5 lbs. beef shank 

Vegetables for the slow cooker:
  • green onions
  • 1 yellow onion
  • 2 - 3 carrots
  • 1 tomato
  • 8 cloves garlic
  • ginger (small 3" piece)

Spices:
  • 1/2 tsp. fennel
  • 3 star anise
  • 8 whole cloves
  • 1 tsp. Sichuan peppercorns
  • 1/2 cinnamon stick
  • 3 - 4 dried chilis 
  • 2 - 4 Tbsp. rice wine (for deglazing) 

Slow cooker broth ingredients:
  • 6 cups filtered water
  • 6 Tbsp. soy sauce
  • 2 Tbsp. beef bouillon paste

Noodles & other soup ingredients:
  • knife-cut frozen noodles
  • baby bok choy 
  • pickled mustard greens
  • fresh red chilis
  • cilantro (garnish)

Ready in Total Time:  6 hr. 40 min.

Prep Time = 40 min.
Cook Time =  6 hr. *

*Cook times:
  1. Blanch the beef & cut into smaller pieces
  2. Put beef and cut vegetables into your slow cooker
  3. Stir fry the spices & put into the slow cooker
  4. Add the broth ingredients into the slow cooker & set to cook
  5. Slow cooker Recommended Cook Times:
                             High Heat:  6 - 8 hours
                             Low Heat:  9 - 10 hours
   6.    When ready to serve, cook the noodles, bok choy and assemble the soup 

Note:  Slow cooker temperatures and cooking times may vary by brand due to the settings.

cut the beef into cubes

measure out your spices
the spices
stir fry the spices to bring out the aroma
the tender beef
strain the soup to ensure a clear broth
