Taiwanese Beef Noodle soup is a popular Taiwanese soup . . . so popular, it's the National Dish of Taiwan. (Yes, there really is a national dish!)
This Beef Noodle Soup recipe is from my Uncle. Great for warming you up on a cold day. I've modified it so we could use the slow cooker and get perfectly tender meat without cooking for hours on the stove.
If you don't have a slow cooker, you can still cook this soup by slowly simmering for about 1 - 2 hours on a very low heat (or until the meat is tender).
If you're curious, I'm using this 4-quart digital slow cooker. It's not too big to take up kitchen space, but still big enough for a recipe like this.
Tip: If you like a stronger flavor and of course more meat, feel free to add more beef into the recipe (which will make the flavors of the soup more intense).
