An herbal nourishing soup, my grandma loves to cook this for me during the fall and winter months.  This recipe calls for black silkie chickens which are known in Traditional Chinese Medicine to be healthy and nourishing for the body.

In addition to the special silkie chicken, there's aged salted turnips which adds a unique depth and flavor to this soup (no additional salt needed since the turnips are already preserved with salt).  In Taiwan, they sell aged salted turnips, but if you can't find this ingredient, you can use regular salted turnips or if you'd like, you can age them yourself.  My grandma has tips on how to do this at the end of my video tutorial.




Ingredients:

  • ​1 whole black silkie chicken
  • 2-3 cloves garlic, sliced
  • 1 small piece of ginger, sliced
  • 10 small pieces of shiitake mushrooms
  • 2 - 3 stalks of aged salted turnips 
  • filtered water (enough to barely cover the chicken)
  • 1 Tbsp. cooking oil (vegetable) 

Ready in Total Time:  50 min.

Prep Time =   20 min.
Cook Time =  30 min.



Preparation:

  1. Trim the legs and neck off the silkie chicken and rinse under cold water to clean.
  2. Bring a large pot of water to a boil and blanch the chicken for a minute or two and set aside.
  3. Prepare and chop your seasonings and other ingredients.
  4. In a clean pot, stir fry all the ingredients for a minute or two before adding the chicken and filtered water.
  5. Bring the soup to a boil, then a gentle simmer, cover and cook for 30 minutes or until the chicken is done.

simmer covered for 30 minutes or until the chicken is done
serve the soup hot in small bowls
