Spicy Wontons in Chili Sauce | 紅油抄手 Hóng yóu chāoshǒu
Spicy Wontons make a delicious and impressive appetizer. I love ordering the Shrimp Wontons at Din Tai Fung (a famous dumpling chain), but when you have a craving, you can make these easily at home. There's a bit of tanginess from the Chinese Chinkiang Vinegar, a hint of sweetness and plenty of spice from the chili oil and chili sauces.
The great thing about making this dish at home, is you can control the level of spice. For a spicier appetizer, add more chili garlic sauce and chili oil. This dish is very quick to make using some pre-made frozen wontons. I usually have a bunch in my fridge for when I want to make wonton soup, and the same wontons can be used to make this addictive appetizer.
Tip: When shopping for Chinese Vinegar, look for the ones marked as Chinkiang Vinegar or Zhenjiang Vinegar (镇江香醋). This type of vinegar is typically used as a dumpling sauce. Also, be aware as some bottles of vinegar marked as 'Chinese Vinegar' and not labeled as Chinkiang Vinegar may contain a special seasoning specific to that brand, which likely won't taste good in this recipe. (Trust me, this is from personal experience).
Cook over low heat, the soy sauce, cane sugar and minced garlic. Stir and cook until the sugar has dissolved, then transfer to a dish & mix with the remaining sauce ingredients.
