Love Starbucks' Pumpkin Spice Lattes? 
Try my homemade version of this fall drink.  In this recipe I use real pumpkin puree and combine it with one of my go-to drink ingredients:  Matcha powder.

Cooking the ingredients and spices over a stove really brings out the flavors and it truly smells like you're making pumpkin pies.  If you are short on time, you can also mix the ingredients and microwave the drink instead.  Either way, I recommend topping it all off with a generous serving of whipped cream & a dash or two of cinnamon.

Tip:  If you're using canned pumpkin, I like to store extras in a mason jar in the fridge for easy use.  This usually stays fresh for about a week.  You can also freeze the pumpkin into ice cube trays if you aren't planning on using the leftovers anytime soon.



Ingredients:

  • 1 1/4 cups of unsweetemed soy milk
  • 1 1/2 Tbsp. Pumpkin puree
  • 1/2 tsp. of pumpkin pie spice
  • 1/2 tsp. vanilla extract
  • 2 Tbsp. water
  • 1 1/2 tsp. matcha powder 
  • 2 Tbsp. organic cane sugar (to taste)

optional: 
  • whipped cream
  • cinnamon

Ready in Total Time:  7 min.

Prep Time =  2 min.*
Cook Time = 5 min.

*Prep time assumes you're using canned pumpkin

measure the ingredients
mix into a paste and cook over low heat
pour into a serving mug
top with whipped cream
