Braised Pork Belly Egg Bites are a tasty snack using my braised pork belly recipe. If you love Starbucks sous vide egg bites, this copycat recipe uses savory pork belly along with some kimchi to give it a bit of crunch and spice. If you have other types of protein on hand like Chinese sausage, bacon or leftover chicken, that also works as well.
Instead of using the sous vide method of cooking which can take a long time to cook at low temperatures, my recipe takes the egg bites base of eggs, cottage cheese, shredded cheese along with some other ingredients and blends them together to make a fluffy sous vide like consistency once steamed. Best of all it's only 10 minute prep time!
Tip: Make this in big batches over the weekend for easy grab and go snacking and breakfast. Let cool before storing in the refrigerator.
Ingredients:
Makes 4 - 5 large egg bites Egg bite base:
4 large eggs
1/2 cup cottage cheese
1/4 cup milk
3/4 cup shredded cheese
1/4 tsp. salt
1 Tbsp. olive oil
pepper to taste
Fillings (your preference):
braised pork belly (cooked)
kimchi
broccoli (frozen)
Ready in Total Time: 35 min.
Prep Time = 10 mins. Cook Time = 22 mins.

Start by preparing the egg bite base in a blender.
Assemble the egg bites in lightly sprayed/oiled molds. I'm using larger silicone muffin cups.
Add the fillings: pork belly pieces, kimchi, and frozen broccoli
Steam on high for 22 minutes or until the eggs bites are done. I'm using a multi-cooker from Galanz to steam the egg bites.
Let cool before removing from the molds and serving.
