Oyster Motoyaki are Japanese style oysters baked in a delicious miso mayonnaise sauce. My very first time trying this style of baked oysters was at a Japanese buffet and it was amazing and kept me wanting more. Made with the popular Kewpie Japanese mayo is a must, as this ingredient takes these oysters to the next level.
I'm using large Pacific Oysters, but any fresh oyster in the shell will work. No professional shucking experience is required. I actually found it much easier to use the microwave in 30 second increments to just cook the oyster so they will open up. This made it simple to open.

Mix the ingredients for your sauce prior to opening the oysters.
Preheat the oven to 350F degrees.
Shuck the oysters or microwave in 30 second increments (covered with a paper towel) until the oysters open slightly.
Remove and cut the oyster meat from the shell and rinse the shell as needed before returning the cut oyster pieces to the shell.
Scoop a generous amount of the sauce over the oysters.
Bake in the oven for 5 minutes, then broil for about 1-2 minutes (watching carefully so they don't burn) - slightly browning on the edges is ok and welcomed!
