Green Onion Pancakes (蔥油餅) sometimes known as Scallion Pancakes are a savory Chinese appetizer. 

The Ingredients are Simple, but making them flaky and crispy requires some technique.  Here's my recipe on how to make flaky green onion pancakes using some tips and hand tricks. Watch the video to learn my technique.  These will turn out so flaky you can hear for yourself at the end of the video tutorial!  

Tip:  Want Extra Pancakes?  

Yes! You can make extra pancakes and freeze them for later use.  Just layer them in between 2 sheets of parchment paper, then put in a plastic freezer bag.  To use, let the pancakes defrost for 2-3 minutes then pan fry as you normally would.



Ingredients:

  • 2 cups of all-purpose flour
  • 3/4 cup of hot water
  • 1 tsp. kosher salt
  • 4 - 5 stalks of green onions
  • Sea salt flakes (I recommend using Maldon)
  • Vegetable or Canola Oil

Ready in Total Time:   1 hr. 8 min.

Prep Time = 1 hour *
Cook Time = 8 min.

  1. Knead the dough for 5 - 8 min. or until smooth.
  2. Let the dough rest for 30 min.
  3. Roll the dough into a thin layer using the 3 hands method in the video.
  4. Roll into a snail shape, then let it rest for another 10 min.
  5. Roll into a pancake (again), this time using the 2 hands measurement guide.

chop some fresh scallions
knead the dough
lightly coat with oil & sprinkle green onions
roll into a snail shape
roll out flat (again)
pan fry on both side until flaky
cut and serve
