  • Ginger Scallion Beef Stir-Fry Recipe (30 minute meal)

Ginger & Scallions  pair well with tender slices of thin beef. In this recipe, I recommend using large amounts of both ginger & scallions.  The ingredients blend well together to make this a truly flavorful dish.  Taste wise, it's very similar to Mongolian Beef.

Also considered one of my weeknight go-to recipes, this dish can be prepped, marinated and cooked in 30 minutes or less.  Served family style with hot rice, a simple bok choy stir fry, along with my easy sweet corn egg flower soup recipe, you'll have a quick and delicious meal for an entire family.

Tip:  Look for beef that's been thinly sliced by your meat department.  They have the fancy meat slicers that will give you beautifully thin cuts which along with the cornstarch, helps make this dish extra tender.



Ingredients:

Marinade
  • 1/2 lb. beef sirloin or top round (thinly sliced)
  • 2 Tbsp. low sodium soy sauce
  • 1 Tbsp. rice wine (or shaoxing cooking wine)
  • 1 tsp. cane sugar
  • 2 tsp. corn starch 
  • 2 tsp. freshly grated ginger
  • fresh ground pepper (to taste)
  • 1 Tbsp. oil 

Other ingredients
  • 5-6 stalks of scallions 
  • salt (to taste) 

Ready in Total Time:  30 min.

Prep Time =  25 min.
Cook Time = 5 min. 

Note:  this marinade will also accommodate beef up to 3/4 lb.



Preparation:


Marinate for 15-20 minutes before cooking.
