Bubble Waffles are a fun and tasty bubble tea shop snack made from a waffle custard flavored batter and cooked in machines with a special egg shaped mold. I've been wanting to make these at home for a very long time and it turns out, once you have the machine or the molds to cook over the stovetop, it's very easy to make.
Sometimes called egg waffles, they're slightly crispy and can be soft and chewy on the inside of the egg depending on how long they've been cooked for. I like to pair my bubble waffles with a cup of plain milk tea to keep things simple.
Tips: The batter can be made in advance and stored in the refrigerator for 1-2 days. When making the waffles, keep in mind that the batter will puff up and expand as it cooks - be careful not to overfill as it will start oozing out from the sides making a small mess for you to clean up later. (Unfortunately, I learned this from personal experience 😔)

Ingredients:
makes approx. 2 egg waffles
1 cup of cake flour
1/2 cup organic cane sugar
1 tsp. baking powder
1 tsp. oil
2 large eggs
1/3 cup filtered water
vanilla extract, splash
Note: I used Bob's Red Mill Cake Flour in this recipe and it worked really well. The bubble waffles turned out really soft and delicate.
Ready in Total Time: 7 min.
Prep Time = 5 min. Cook Time = 3 min.

Sift together the dry ingredients before adding the eggs and rest of the wet ingredients. Mix well until smooth. Strain (if needed).
Preheat your bubble waffle maker, then lightly spray with non-stick cooking oil before pouring in about 2/3 cup of the batter (may vary depending on the size of your waffle maker).
Cook the batter for approximately 3 minutes (or until golden brown) following the method and steps in the video.
