Steamed Chicken Soup from Din Tai Fung is a must order item for soup lovers.  Thier House Special Jidori Chicken Soup is steamed for hours with ginger and green onions.  In thier resturaunts, they use Jidori Chicken (bone-in) which really creates the rich flavors of the broth.  Since Jidori chicken is hard to find at most grocery stores, my copycat recipe substitutes organic, free-range chicken drumettes and chicken wings.  Steamed for 1 hour, this soup recipe stands out as an impressive steamed chicken soup that's flavorful, yet clean tasting.  

Tip: Buy extra chicken, ginger, and green onions to pre-portion and place in a freeer bag.  These make great easy to steam one bowl chicken soups whenever you're having that soup craving.




Ingredients:

Makes 1 serving
  • 3/4 cup filtered water
  • 4 chicken wings/drumettes 
  • 1 slice of ginger (1" x 2" thin slice)
  • 1 green onion stalk (white end only)
  • 1 tsp. rice wine
  • salt to taste

Ready in Total Time:  65 min.

Prep Time =  5 mins.
Steaming Time = 60 mins.



Preparation:

  1. Place chicken into a pan covered with water and bring to a boil for 3 minutes.  
  2. Discard the water and rinse the chicken to remove the impurities before placing the chicken in a bowl for steaming.
  3. Add 1 slice of ginger and a green onion stalk to the bowl along with the rice wine and salt to taste.
  4. Add 3/4 cups of filtered water.
  5. Cover tightly with aluminum foil or a lid and steam for 1 hour.
  6. Remove the cover and let cool slightly before serving hot.
steam for 1 hour (covered)
