Traditional Chinese Almond Cookies | Simple Recipe
Remember eating these? They're Traditional Chinese Almond Cookies that are so buttery tasting, I can never eat just one! And after trying these, I'm pretty sure you'll pass on the store bought kind.
These cookies would be great to serve as a Chinese New Year dessert, or for bringing to work/school and sharing with friends. This recipe makes 1 dozen cookies, but feel free to double the recipe and freeze/refrigerate the cookie dough until you're ready to use.
Ingredients:
makes 1 dozen cookies
1 1/4 cups all purpose flour
3/4 cups cane sugar
2 Tbsp. dry milk powder
3/4 tsp. baking powder
3/4 tsp. salt
1 tsp. almond extract
1 egg, wisked (1/2 for dough, 1/2 + a bit of water)
Mix in wet ingredients, reserving 1/2 the egg for an egg wash
Freeze or refrigerate the dough in plastic wrap until chilled and firmness is like butter
Divide into 12 equal pieces and roll into a ball. Push each ball down with the palm of your hand, then using a fork press gently to make a criss-cross indentation.
With the remaining 1/2 of the egg, add a splash of water or milk to make an egg wash and using a pastry brush, lightly coat the tops of each cookie.
Top with sliced almonds
Bake in a pre-heated oven @ 350F degrees for 10 - 15 minutes, or until golden brown
