Remember eating these?  They're Traditional Chinese Almond Cookies that are so buttery tasting, I can never eat just one!  And after trying these, I'm pretty sure you'll pass on the store bought kind.  

These cookies would be great to serve as a Chinese New Year dessert, or for bringing to work/school and sharing with friends. This recipe makes 1 dozen cookies, but feel free to double the recipe and freeze/refrigerate the cookie dough until you're ready to use. 




Ingredients:

makes 1 dozen cookies
  • 1 1/4 cups all purpose flour 
  • 3/4 cups cane sugar
  • 2 Tbsp. dry milk powder 
  • 3/4 tsp. baking powder
  • 3/4 tsp. salt
  • 1 tsp. almond extract
  • 1 egg, wisked (1/2 for dough, 1/2 + a bit of water)
  • 1/2 cup butter
  • sliced almonds (for topping)


Ready in Total Time:  50 min.

Prep Time =  35 min.*
Cook Time =  15 min.



Preparation:

  1. Sift the dry ingredients together
  2. Mix in wet ingredients, reserving 1/2 the egg for an egg wash
  3. Freeze or refrigerate the dough in plastic wrap until chilled and firmness is like butter 
  4. Divide into 12 equal pieces and roll into a ball.  Push each ball down with the palm of your hand, then using a fork press gently to make a criss-cross indentation. 
  5. With the remaining 1/2 of the egg, add a splash of water or milk to make an egg wash and using a pastry brush, lightly coat the tops of each cookie.  
  6. Top with sliced almonds
  7. Bake in a pre-heated oven @ 350F degrees for 10 - 15 minutes, or until golden brown
  8. Let the cookies cool on a rack before serving
