Asian Cucumber Salad ♥ Din Tai Fung Copycat Recipe
Asian Cucumber Salad is a light and refreshing appetizer that is also one of my favorites to order at Din Tai Fung. It's refreshing, light and crunchy with a nice touch of garlic and sesame oil flavors. If you love fresh cucumbers this is a great way to make a healthy side dish to go along with your family style meal or plate of dumplings!
The cucumbers can be prepared in advance the day before and keeps nice and crunchy in the refrigerator so don't be afraid to make extra!
Ingredients:
2 Persian Cucumbers
1-2 garlic cloves
1 tsp. sesame oil
1/4 tsp. cane sugar
1/2 tsp. salt
drizzle chili oil
Ready in Total Time: 25 min.
Prep Time = 5 mins. Marination Time = 20 mins.

Slice the cucumbers into even circular pieces about 1” thick, place in a bowl
Mince the garlic and slice some additional garlic if you like whole garlic pieces, place in the bowl
Add salt, mix and let marinate in the refrigerator for at least 20 minutes.
Give the cucumbers a quick rinse or two, to remove the excess salt and minced garlic (saving the remaining larger garlic pieces).
Finish by mixing in the cane sugar, sesame oil, and optional chili oil.
