AiYu Jelly  is one of Taiwan's famous summer drinks and desserts.  The jelly is so refreshing that it's very common to see this sold at the night markets because it makes a great drink to balance the savory night market foods.  

In my video recipe, I used a special dried fig fruit seed which I rubbed together with some spring water and within a few minutes, the seeds were interacting with the minerals in the water, creating a jelly.  I think this process is so unique and amazing, not to mention just plain fun!  

Within 30 minutes, the jelly will have developed and you're able to mix this with a refreshing sweetened lime mixture, served with ice.  I recommend consuming this with 1-2 days as the jelly will return to it's original liquid form after a while. 



Ingredients:

  • seeds from 1 dried fig fruit (Aiyu seeds)
  • 5 cups spring water 
  • 1 fine mesh pouch or cheesecloth

lime syrup
  • 1/2 cup honey or sugar
  • 2 cups water
  • 2 limes (juiced) + a few slices for the bowl

Ready in Total Time:  55 min.

Prep Time =  50 min.
Cook time =  5 min.
